Abstract

Experiments on prune drying with different surface treatments were carried out. Air temperature, relative humidity and velocity conditions, characteristic of solar multishelf batch driers in a hot-temperature, humid climate region were employed. Dipping prunes in 4% methyl oleate was the most effective treatment because of the faster drying rate attained and the better appearance of the final product. An interesting alternative is the employment of olive oil-potassium carbonate emulsions as they are less expensive and can be easily obtained.
