Abstract

Andalusian rural areas generally concentrate their production in economic activities directly related to the primary sector. As the inhabitants of these areas have low levels of income, additional revenues are needed to raise their standard of living. Rural tourism, and especially the gastronomic tourism, may be the engine of economic development and of job creation. This paper presents an analysis of the gastronomic tourist profile in Andalusia and the supply linked to Protected Designations of Origin and Protected Geographical Indications, in order to establish a quality tourism product appropriate to the demand. The tourist activity can complement the agricultural activity, generating wealth in these rural areas.
